Clos Centeilles is a wine estate with remarkable dedication to the forgotten. In 1990, owner and winemaker Patricia Boyer-Domergue adopted a plot of land at the base of the Montagne Noire in the southern wine appellation of Minervois. The land is peppered with centuries-old stone structures, complimented by the local, ancient varietals that Patricia tasks herself with reviving. Patricia's dedication and care doesn't end with her nurturing of forgotten vines, but continues through her entire winemaking process. Many of her grapes are pressed by foot and are left to mature in the bottle until Patricia believes they are ready to be released.
